I saw this on ynet in their books section. It was a category link, up there with ביקורות ספרים, שירה, etc. The literal translation - "books by/about/on the knife" - doesn't make sense to me. What does it mean to Hebrew speakers?

Correct me if I'm wrong but I think it is related to watermelon sellers in the marketplace. They shout 'על הסכין' and brandish the cut-open watermelons to show their ripeness. In this case, ספרים על הסכין, it is like a showcase of the best books of the moment.

You are correct. Let me just add that ספרים על הסכין might also mean: we are reviewing those books, we are "checking" them, to see how good they are.
