When describing a house that's brown do you need the "de color" in front of café? Or is it OK to just say casa café? Would you say casa de color rojo?

No, con sólo decir "la casa roja, café, amarilla, naranja, etc.", se entendería.

'Casa café' is okay. What you can't do is say, "¿Qué color es la casa?". Instead you must say, "¿De qué color es la casa?"
