    Buscando por Internet encontré que "carré de cerdo" es pork loin.

    Pork loin se refiere más a lomo de cerdo. Cuando se habla de rack of lamb lo he visto puesto como carré de cordero y así se escribe en los menús de las aerolíneas. De modo que en este caso es mejor ponerlo como rack of pork.

    In Brit English, this joint of pork would be described as "loin of pork" or "pork loin", regardless of whether it has been boned (bone removed, for non-native English speakers) or not. I've never heard anyone say "rack of pork", nor have I seen it in any of my many cookbooks. If the piece of meat is chined (according to my Spanish butcher, "marcado" in Spanish) and formed into a crown, then you would, as for lamb, describe it as a "crown roast of pork".

    In our dictionary we have that carré de cerde is Rack of pork, that could also be rip of pork, in Spanish costilla de cerdo, it can also be rack of lamb, costilla de cordero
