changer le fouet contre une feuille

    Bonjour tout le monde!

    It is part of a recipe for "nougat".

    -Verser ensuite la cuisson de sucre cuit.
    -Après quelques minutes changer le fouet contre une feuille.
    -Laisser cuire le nougat, vérifier avec la pointe d'un couteau la cuisson.

    I don't understand what the part in red means.

    Please help!

    These are attachments on a kitchen robot.
    Images: fouet ; feuille (sort of looks like a tree leaf).
    So, after whipping for a while, you change the whip attachment for another one that mixes more gently.
    (No idea what the English term is for the feuille though, sorry. Somebody knows?)
