    I ran across the word "ciento" for 100 in a textbook.

    Isn't 100 simply "cien" and anything greater than 100 is
    ciento uno
    ciento dos etc...

    Or do some refer ciento as 100?

    HI! If you want to say 100%, you may say: "ciento por ciento" or "cien por cien", it's the same. The RAE dictionary says "cien" is the apocopated form of "ciento". We generally use "cien". Maybe in other Spanish speaking countries "ciento" is more used.

    Yes, you can also say that. When you are refering to a percentage, you always say "X por ciento", because that's what the symbol means
