    omg, it's gross..........
    The thing is that I just checked my recipe. it's going like "farcissez les poitrines avec le foie gras, mettez la farce autour, montez en crepine".
    "Monter en crepine" means put everthing into the crepine or what?

    I've never heard of "monter en crépine" before, it sounds strange! Usually you would "envelopper de crépine", like you do when you make caillettes

    Looks yummy! Any doctors out there who are also cooks or butchers -- is this a mesentery, a greater omentum, or something else? I'm thinking a mesentery.

    Voici la définition du TLFi : « La crépine est la membrane graisseuse qui enveloppe les viscères du mouton, du porc ou du veau et qui est utilisée en boucherie pour recouvrir les morceaux de viande (en partic., les rognons) mis à l'étal. »

    C'est souvent utilisé en cuisine pour refermer quelque chose de farci et le (re)mettre en forme.

    For my fellow doctors, it seems that it is primarily the mesentery but might also be part of the mesocolon and/or greater omentum. Nice to know it isn't wasted.
