I was wondering how to translate the phrase "dying wish"
As in: It was my father's dying wish that I take care of my mother and sister.

    Souhait de mort?

    Thanks!

    Le dernier souhait.

Souhait de mort doesn't exist in French but if it did, it would mean deathwish. :)

Dernier voeu would be event better, in my opinion.

C'était le souhait de mon père avant qu'il ne meure que je prenne charge de ma mère et de ma soeur.

Prendre charge de qqch/qqun doesn't sound well to me. It's not that common in (Parisian?) French. I'm more familiar with prendre qqch/qq'un en charge.
I'd rather translate that I take care of... in que je prenne soin de... or que je m'occupe de...
And I would add a comma after meure.

That said, I think this quite formal sentence is a fine translation.

C'était le dernier voeu/le dernier souhait/la dernière volonté de mon père que je prenne soin de ma mère et de ma soeur après sa mort.
