    Hola! ¿sabe alguien el significado de "gelation"?

    Recently,
    have described the potential applications of laccase in different aspects of the food industry such as bioremediation, beverage processing, ascorbic acid determination, sugar beet pectin gelation, baking and as a biosensor.
