    Witam!
Czy jeśli pytamy: jak myślisz użyjemy how czy what do you think? Ja na pewno użyłabym what, ale czy how będzie niepoprawne?

    Pozdrawiam!

What do you think -- only.

Chyba, że pytamy o sposób (proces) rozumowania:

Jak myślisz? = W jaki sposób myślisz?

    Wtedy będzie to "how".

Czyli jeśli chciałabym powiedzieć/napisać coś takiego: jak myślisz, ile tu jest osób? what do you think how many people are here? Jakoś dziwnie mi to brzmi, ale może to tylko jakiś mój wymysł:)

    Hi klaudek!

The example you gave is fine. You would just need to adjust the punctuation a bit, dividing it into two separate sentences:
What do you think? How many people are here?

But it would probably be more common to simply ask: How many people do you think are here? (That's how I would translate your question.)
