¿Podriamos traducir "saber diferenciar lo justo de lo injusto" como "to know the difference between the fair and unfair?

Yes, but it sounds a bit strange.

"To know the difference between what's fair and what's not."

"To know the difference between what's fair and what's unfair."

A slight change to yours improves it to my ear: "to know the difference between the fair and the unfair." (But this almost sounds like you are talking about fair people and unfair people.)

How to know the difference between fairness and unfairness?
If you know the answer, you are quite wise, my dear.
    See you tomorrow...
