la glandula tiroide interviene en la digestion.....

    Would this be best translated as

    "the thyroid gland intervenes in digestion"

    or "the thyroid gland plays a role in digestion"

    or something else?

    Not sure if "intervenir" can be translated as "intervene" in this case.......

    I would go for your second option in this case. The verb intervene is usually used in English more in a context of interrupting or interfering in a process; for example, a person can intervene to prevent a fight between two friends, or a government can intervene in an industry to stop it from going bankrupt (I can't think why that sounds familiar...)

    Sure, those sound fine, but are you trying to say that the thryroid gland is part of the process and therefore has a concrete role in it, or are you just trying to say that it affects that process, possibly variably, from outside of it? They are two different ideas.
