like a chicken with the gapes

    Hello everybody,
    could you help me please with the sentence "like a chicken with the gapes"? I can't understand the meaning! I write the full sentence below:

    "Crow tried to answer, but he could not. His mouth felt as dry and stiff and hard as a chip, and he suddenly began to open it wide and shut it slowly, like a chicken with the gapes".

    My attempt:
    "Crow provò a rispondere, ma non ci riuscì. La sua bocca sembrava secca, rigida e dura come una patatina [:confused:], e improvvisamente inizò a spalancarla e chiuderla lentamente [...]".
