    Boned chicken and boneless chicken are the same thing. Both terms are in common use.

    However, in the context of this thread, "boned" is the preferred term because it is the past participle of a transitive verb, as is "shredded," so the two make a pair. In other words, "boned" is the result of an action, while "boneless" is a passive state.
