EEB is Encefalopatía Espongiforme Bovina (in English BCE, Bovine Spongiform Encephalopathy, or colloquially mad cow disease).

    Your translation is good.

How would I translate reservorios to English in the following sentence?

Las mongostas son reservorios de esta enfermedad (la rabia). Esto quiere decir que llevan la enfermedad y no mueren por causa de ella.

    reservoirs?

Perhaps "vectors", or "carriers", "transmitters". The first is more technical, the others more colloquial but less exclusive regarding the effect of the disease on the carrier. "Reservoirs" is less common in this sense, but would be understood.
