suer des oignons

    Hi.
    Ca veut dire quoi, "suer des oignons dans un sautoir", dans une recette (d'un plat de légumes)
    En français ou en anglais, car je n'y comprends rien.

    That's "faire suer".
    It means remove the water it contains, and start cooking it at the same time.

    faire suer les oignons : leur faire perdre leur eau (et il faut faire attention à ne pas les laisser brunir). Il faut les placer dans une poêle (un sautoir) mais dans de la matière grasse encore froide (si elle est éjà chaude, ils font brunir) et réchauffer tout doucement en surveillant. le but est d'éviter que le gout de l'oignon prenne le pas sur les autres légumes...

    je ne sais pas comment ça se dit en anglais par contre...

    The process is "saute the onions" in oil (cook in oil or other fat) to a certain point.
    (can be seen writen also as "sauté" directly from French)

    This can be referred as :

    The time -> for 3 to 5 minutes

    the color -> the chopped onions become yellow/yellowish/dark yellow

    the evaporation by heat (sweating) -> become soft/mellow/tender

    This will give you "sauteed onions" (adj 1 fried quickly in a little fat )




    "Melting the onions" is a farther step in the process also called "caramelize the onions" where they reach a dark brown color.

    I add my voice to Guerric's suggestion.

    Faire suer des oignons = to sweat onions.


    The other suggestions refer to faire fondre les oignons (to melt onions) and sauter des oignons (to sauté onions).
