can some tell me if my take on this is correct?

while we get more if not to say all the sweetness

the phrase ends with 'par la douceur'

tandis qu'on obtient beacoup pour ne pas dire tout par la douceur.

Frankly, I'd settle for a nonliteral translation --

whereas a gentle approach will get you a lot further.

    The relevant proverb is

You catch more flies with sugar than with vinegar.
