Tender vegetables- opposite

    Vegetables like gourds, brinjals, lady fingers etc. are good for cooking and eating when they are tender. But, if they are allowed to remain on their plants a few more days, the vegetables become hard and hence are not fit for cooking. What are such vegetables called? ...hard, aged, old ?

    If they become very hard, they are "brittle". If they are just turning hard and the skin is just starting to wrinkle, they can be called "leathery".

    In a general way, these vegetables are all "over-ripe".

    In describing vegetables, the words "young, tender" and "old, tough" seem to go together in pairs.

    If all you have in the pantry are some old, tough carrots it would be better to use them in soup than in salad.

    Young, tender asparagus spears are delicious when lightly steamed.

    I agree that "tough" is best for these veggies! :)

    "Woody" is often used of over-mature vegetables —> I'm thinking particularly of Irish carrots here ;) but I've heard it used of other vegetables also.
