An Arabic sentence that contains a verb goes this way by default: Verb - subject - direct object - everything else

But why did عني move before in الحمد لله الذي أذهب عني الأذى وعافاني Instead of أذهب الأذى عني?

VSO is the default or normative order, other orders are also correct with minor exceptions. Usually the change of order is to put emphasis on the word or phrase brought forward. In this case عني is more important than الأذى, hence it’s emphasized by bringing it forward.

How is عني more important than الأذى?

الحمد لله الذي أذهب عني الأذى وعافاني
Praise be to Allah, who made what was hurtful go away from me and granted me health and safety.
