I've gone through numerous example sentences that contain 平等. However, 平等 is used in social affairs in all of them, such as equal rights, equal positions or equal pay. Can we use it for basically anything, like when we want to say equal weight or equal quantities?

No. It's a word that expresses the social notion of equality. Also note that its part of speech is a noun.

If you want to translate the adjective in these contexts, better candidates are: 等しい, 同じ, and 同等の

Other options include 同量、同数、同容量、etc.
