I think you can say, "A bed is a piece of furniture." Can you simply say, "A bed is furniture."?
Similarly, you can say, "A bed, a table, and a chair are pieces of furniture." Can you simply say, "A bed, a table, and a chair are furniture."?

In the right context, I think you can say, "A bed is furniture" – for example, when someone is trying to say that a bed is something else.

Man, to workmen bringing a bed into the house: "Put that appliance in the guest bedroom."
Man's sister, to her brother: "A bed is furniture, not an appliance."

For your last sentence, since you're speaking generally, I would use plurals: "Beds, tables and chairs are furniture."
