2. A man living in the apartment above mine
3. A man living above my apartment

Which is/are correct?

Also, if there are othe ways of saying this, could you please tell me what they are?

    Number two is the most correct; if I were writing in a formal context I would choose this option. On the other hand, in conversation, you'd be more likely to hear number one. Number three is the only option that you would never use - or rather, you'd only use it if you meant that a man was living in, say, the attic above your apartment. You could, however, say "the man living above me" and this would be understood as your upstairs neighbor, which is the only answer to your second question that I can think of.
