    Children grow into mature adults.
A child grows into a mature adult.

(NB Make sure the number agrees: your children grow into a doesn't work.)

This cheese has been matured for five years.

That's my feeling, at any rate.

EDIT: Edited to remove embarassing howler.

    Children grow into adults.
Is there any special reason for including mature?
Quite right. Children grow up. No need for the adult bit either. :)

EDIT: Come to think of it, some children grow into IMMATURE adults. Another reason to ditch the whole maturity thing.
