We all know that the word wine is uncountable, but is it possible to say " a wine " when we refer to a kind or type of wine?

e.g This is a good wine. ( a good kind of wine)

Yes, that is a standard example of when an uncountable noun can be used as countable. We also use the plural: the various wines and cheeses of France.
