ABC (a family-owned restaurant) was established in 1951. This year marks its 60th anniversary/birthday.

Does either 'anniversary' or 'birthday' work? Thank you.

Yearly celebrations of events are always anniversaries unless they actually commemorate the birth of a human (or an animal).

I agree with all of the above, which is to say that formally, use "anniversary."

Colloquially and metaphorically, "birthday" is used frequently.
