Verb Plot meaning 3: to mark, calculate, or follow the position of a moving aircraft, a ship, stars, etc.:

Can I say "a moving aircraft, a ship, a star, etc." or "moving aircraft, ships, stars"?

Yes, you can. Perhaps the writer of this definition thought that people who plot the paths of aircraft and ships are interested primarily in one aircraft or ship (the one they're on), but those who plot the positions of stars often care about several of them.
