at/on the sauce station

Mandarin / the Shanghai Dialect

The pork, like the turkey, was tender, juicy, and flavorful and the bread was pleasantly soft, with a subtle sweetness. To this I added the vinegary/sweet/spicy BBQ sauce, one of five different sauces David had put into the plastic cups provided at the sauce station.

Savory smoked selections

I imagine the sauce station to be a table where cups of sauce sit. Is “on the sauce station” also possible here?

The empty cups (probably stacked up) are beside large containers of sauce. You put the sauce in the cups yourself. The cups could be on, in, at, beside, next to, ... the sauce station.

The sauce station is a location in the restaurant. You walk from your table to the sauce station. "At" fits that context. At that location in the restaurant you can get sauce.
