It's a gangsta movie. A character is saying:

Well, Mickey Cohen used to take his associates out there... bid 'em a bon voyage.

I'm not sure I quite understand the 'bid 'em' part...

    Bid someone bon voyage = wish them a good journey. In the gangster context, I guess it is meant ironically.

    ‘Em means them. It is a common informal alternative to them in unstressed positions. (It is commonly written with an apostrophe, though historically them and ‘em are not cognate.)
