Do you know what does cannon here mean?

"So Biju was learning to sear steaks.
Blood, meat, salt, and the cannon directed at the plates: "Would you like freshly grounded pepper on that, sir?"

I've checked all the meanings of cannon, but there's nothing as a food! Maybe it refers to something!
I shall also explain that Biju is an Indian who believes cow as a holy thing, so he hates cooking meat in the American restaurant where he has to work.

It's part of Inheritance of Loss, a novel by Kiran Desai.
