'Cheese' is a general statement, alfalfa. If they were talking about a specific cheese they would probably say, The cheese is ......... . 🙂

I don't know, if someone says cheese is fifty percent fat, I understand that they mean "on average". I don't think that's just me, that's a widespread way of speaking.
Whether one likes or dislikes a particular way of speaking, if people use it and it makes sense to most people, then the question of how to translate it is also valid.
To me it doesn't seem worth arguing about, so I'm going to leave it at that.
