comma before and after 'and' [conjunction]: at the office, and, while

I'm at the office, and, while I'm in the bathroom, some guy walks off with my iPad.

Please give me some advice on the comma usage in this sentence.

What I would do: I'm at the office, and while I'm in the bathroom some guy walks off with my iPad.
Also what I would do: Take my iPad to the bathroom with me.
