When one wants to rename a word or phrase by using 'or', should a commas be used???

There have been many arguments regarding why Metallia decided to "sell out", or turn their backs on the formula that made them famous...

    Yes, use the comma.
    Without the comma, it sounds like you are saying two different things, rather than rephrasing the first one.
