I must say "My cousin often complains me that anyone doesn't understand her" by gerund using. Did I do it correct? - "My cousin often complains me of anyone's not understanding her".

Thanks!

You are starting from a flawed sentence. "Complains me" and "Anyone doesn't understand her" are incorrect. I would say "My cousin often complains to me that no one understands her." "My cousin often complains to me of not being understood by anyone" employs a gerund.

Shall I also use a passive form if to use something like "that man" istead of "no one"?
"My cousin often complains to me of her husband's not understanding her". Is this one also incorrect?

    Thanks!

    It is awkward.

"My cousin often complains to me of her husband's lack of understanding/empathy."
"My cousin often complains to me that her husband doesn't understand her."
