cuisine of Mexican food

Is "cuisine of Mexican food" and "Cuisine of us" are correct? Or I need to say "The cuisine of our food" instead of "Cuisine of us"?
The cuisine of Mexican food is very similar to the cuisine of us.

"Cuisine" in this context is a particular style or category of food and cooking methods, so "cuisine of food" is redundant. "Mexican cuisine is very similar to our cuisine" would be fine. "Mexican food is similar to our food" is also possible.
