I am not sure whether all are good and possible English.

I think it's possible to use the first two, but the last one isn't good English

"Oil grease" is redundant. "Dirted" is not a word.
I would use either "He climbed out from under the car, hands dirty with grease" or "... dirtied by grease".

I would find "dirty/dirtied with grease" an odd phrase. Dirt and grease are two very different things to me.

Also, how do you climb down from under a car? Wouldn't you climb up? Edit: Or as Myridon said, out?

The only way I can imagine "down" is if the car is up on a rack. Dirty and greasy are two very different things to me, too.
