easy enough plot (hyphen?)

It's tempting at first sight to hyphenate it, but 'enough' is just an adverb that follows its adjective, so 'easy enough' is a transparent syntactic combination like 'rather easy' and 'very easy', not a compound.

I agree. I am a big believer in the efficacy of hyphens to eliminate uncertainty, but I don't detect any uncertainty here. Of course, uncertainty is a judgement call, but I'd be very confident in writing this without a hyphen.
