educate ourselves as consumers

“That’s driving what farmers are able to grow and sell, so if we were able to change our consumer culture and educate ourselves as consumers that taste is not necessarily tied to size or shape, then we would be able to demand differently and that would affect what farmers are growing,”

(This comes from Food waste in America: A growing problem on November 19, 2015.)

I think the blue part mean "we educate ourselves who are consumers" rather than "as consumers, we educate ourselves", right?

    I understand it as "educate ourselves, in our capacity as consumers". It refers to educating themselves on a certain thing that they need to keep in mind as consumers.
