    Thanks, this is interesting. Obviously the etymology of the word concerns spinach. However, I see that there exist many different esparregado recipes, involving not only spinach but several other kinds of greens (particularly cabbage it seems, couve nabiça and couve galega). Consequently, there is no single term in English that translates esparregado, unless we are really reductive and translate it as 'purée'. So far I have the following, and further suggestions are welcome -
    Creamed spinach
    Creamed greens
    Green purée.
