Everyone works in 'their' own time zone.

In such sentences why do we use 'their' instead of 'his/her'? Everyone works in his own time zone.

Is to avoid specifying a certain gender?

Yes, 'their' is how everyone says this. It's an ordinary word, whereas 'his/her' is an awkward combination sometimes used in writing, but not natural in speech. (Look for previous threads on this topic.)
