I wonder if I can replace a really good with outstanding or excellent without changing the meaning and also I wonder if outstadning and excellent are academic words which can be used in academic writing.

The study is a really good example of the way sociologists collects their data.

I see no difference between really good and outstanding/excellent when it comes to academic writing.
I agree that if you've just seen a good film and you want to say this, you are more likely to say that it was really good as opposed to outstanding. Perhaps this is what you are thinking of.

If you were to say I thought it was a fabulous film, this word would be more assocated with informal speech and unlikely to appear in serious writing.

In my experience, 'really' is not considered acceptable in academic writing. I would replace it with 'excellent'. For me, they are synonyms, whereas outstanding is more than excellent.
