man : Even though there are moos habitats set up all over the place, the moose is almost extinct.
moose : but we smell a heck of a lot better than antelopes
man : I said extinct.

Could you explain why the moose said that and the man underlined ex?

Where is this from? I'm guessing it might be a comedy, like Madagascar but with mooses. As the moose mentioned smell, probably it heard 'extinct' as 'stink' (or the incorrect past tense :cross:'stinked', which it's even closer to). Then stressing the other syllable shows that the man didn't say 'stink(ed)'.
