"fast-in, fast-out fishtank-style cafe" means the self-service cafe with a big glass facade such as starbucks?

    Not in my understanding of the term. To me, a self-service food establishment would be an automat or a buffet, for example. In other words, if you place an order with someone, I wouldn't consider it "self-service."

    I was going to say that I can also picture this "fishtank restaurant" being a diner like the one in Edward Hopper's famous painting, "Nighthawks."

    I see. Maybe I should rather say "fastfood-style" than "self-service."
    And thank you for the picture of "Nighthawks."
    It gives me a clear image for "fishtank restaurant."
