I am translating a text including ingredients used for Modica chocolate:

...pistacchi, scorzette di arancia candita o fave cuttaie.

...pistachios, candied orange peel or [ ] beans.

Does anyone know what fave cuttaie are, please?

Following it up on wikipedia, seems like we also call them fava beans, particularly regarding South American dishes, but I think they're the same thing. I'm lucky to get an answer from someone from the exact region!

Una domanda (giusto per mia scienza!): cuttaie è un termine italiano, secondo te, o si usa solo dalle parti di Modica? E se è un termine locale, come si potrebbe dire in italiano (oppure non esiste?).

Secondo me è un termine inesistente, forse è un errore di battitura.
In italiano si potrebbe dire "fave tostate", in siciliano "favi caliati".

Mi viene l'acquolino...adoro le fave, come le fai, le fai!

Comunque, per curiosità mi sono fatta un giro su Google, a Modica effettivamente esiste la "fava cuttaia".
