Hi,

I am watching "The Great British Bake off" and there is a line that I don't understand.
In a scene, after one of the participants redo his scones, he says,

"I'm hoping my scones will rise. I must admit, there have been times in my life where I've felt calmer."

What does this "I must admit, there have been times in my life where I've felt calmer."
Does this mean he is feeling very panicked at that moment?
