I think 'fly solo' is just a figure which means she attended the wedding alone. She didn't really fly.

Can I use sail solo for such a case? Would it sound weird?

I think I usually hear "fly solo" with this meaning, though many people would likely understand you if you were to use "sail solo" to mean the same thing.
