Hi

If I send an e-mail at 9.30 at night, I would start my e-mail like this:

Good evening,

blablabla

Is it correct?

I wouldn´t use "Good night," as it should only be used when you are going to bed.

We tend to use "good night" as a good-bye greeting, not a hello one.
But, frankly, unless you know the person is going to read your email the same evening, I would not use "good evening". They might not see your message until tomorrow.

but how would you start an e-mail at night time?

If it´s in the morning you say Good morning, in the afternoon Good afternoon,

If you don´t use Good night at night time, Could you please tell me what to use?

    Thank you for your answers
