I am fine.
I am happy.
I am + Adjective.

'I am doing just fine'
how come does 'fine' come after 'do' verb?

Thanks in advance.

'I am doing just fine' is an instance of using the usually transitive verb "do" in an intransitive sense. You could leave "doing" out without removing much of the meaning. To my mind, it simply restricts the time of the "fineness" to the present.
