I'm confused by using his/her/ their

Here are my example :

Professor has a great deal of practical experience in his or her field of study.
Professor has a great deal of practical experience in their fields of study.

Professors have a great deal of practical experience in their fields of study.

Professors have a great deal of practical experience in his or her field of study.

Is my understand correct?
