Can somebody please help me to sort out the difference in these words?
hit / bang / knock

If I want to break the shell of a egg with a knife, which one of these can be used?

To tell you the truth I normally use "to crack".
But as far as the words you suggested are concerned:
Hit the egg on the edge of the bowl would be better.
If you bang it - there wouldn't be much left of the egg, if you knock it it is generally accidental. I knocked the egg and it cracked.

    my 2 cents:

Incidentally, I hit the iron so hard, and it was knocked off the table, banged the ground, cracked some glasses lying on the ground.
