Hello!
Does "Hold the mustard" mean "Don't put mustard at all" or "Put little mustard"?
Is there any other reference I am missing here?
Thank you!

If you hold an ingredient, you don't put in any.

I'd like a corned beef on rye, light [or easy on the] mustard.
Light or easy indicate that I want less than the usual amount.

It's definitelly no mustard at all, and as much as I know very commonly used phrase if you don't want to get something, especially when regarding food/drink.
