(1) Last Sunday, I did a few things I had never done before: jog five kilometers, drink five liters of water, and eat five hamburgers.

(2) Last Sunday, I did a few things I had never done before: jogged five kilometers, drank five liters of water, and ate five hamburgers.

(3) Last Sunday, I did a few things I had never done before: jogging five kilometers, drinking five liters of water, and eating five hamburgers.

I am not sure which verb form of "jog, drink and eat" works best. Thank you very much for your time and help.

I would either follow the colon with "I jogged" or change the colon to a comma and use "jogging."

Version (1) is also good enough for informal language.
